Characteristics of Corn Zein and Methyl Cellulose Bilayer Edible Films according to Preparation Protocol

Abstract
To improve the characteristics of the individual films made from corn-zein (CZ) and methyl cellulose (MC), composite films with different CZ and MC ratios and coating protocols were prepared and characterized in terms of physical and permeability properties. CZ (16.6%) or MC (3.0%) solutions (3 to 12g) were poured onto petridishes and dried overnight under ambient conditions. Then, MC solution was poured onto the dried CZ film or CZ solution on MC film to obtain MC/CZ or CZ/MC films. The MC/CZ film changed its color from yellow to whitish yellow and its surface uneven by decreasing CZ applied, but opposite trends were noted for CZ/MC films. Water vapor transmission rate (WVTR) of CZ and MC films decreased from 593 and 1226 g/d/§³ in 3 g solution to 485 and 1060 g/d/§³ in 12 g solution, respectively. However, the composite films had much lower WVTR of 362-748 g/d/§³ than the individual films. Puncture force and tensile strength of the individual CZ and MC films increased proportionally with the solution weight. The composite films also showed higher puncture force and tensile strength than the individual films, but the values did not show any significant trend.
